Spaghetti Squash and Meatballs

I often add cut up veggies to the sauce (carrots, zucchini, mushrooms, etc.) and it’s a quick dinner (and a way to sneak more veggies into your kiddos)!

The day I took this pic I actually took the time to make meatballs, but usually I just add the ground meat to the sauce and skip the meatballs.

For those not familiar with spaghetti squash, there are two ways to prepare it. You can cut it in half and scoop out the seeds, coat the inside with olive oil and bake it in the oven (cut side down) at 400 degrees for 30-40 minutes. OR you can poke holes in it and microwave it (but I really hate microwaves!) in 5-minute intervals (rotating it each time) until it’s a little soft. Either way, once it’s cooked, simply shred the inside with a fork and it turns into ‘spaghetti.’

These Newman’s Own sauces have no added sugars and they are delicious! (Read labels though – not ALL Newman’s Own stuff is compliant).
